Aloo Posto with Bengali Garam Masala (Veg)
Serves 4 people
Ingredients

500 g potatoes, cubed

3 tbsp poppy seed paste

2 green chillies
-
2 tbsp mustard oil
-
½ tsp turmeric powder
-
Salt to taste

½ tsp The Bong Connection Bengali Garam Masala
Method

Heat mustard oil until smoking lightly.
-
Add green chillies and potatoes.
-
Add turmeric and salt. Cook for 8–10 minutes.
-
Add poppy seed paste with a little water.
-
Cover and cook until potatoes become soft.
-
Sprinkle Bengali Garam Masala before serving.
Best served with: Steamed rice.
Cholar Dal (Veg)
Ingredients

1 cup Bengal gram (chana dal)
-
2 tbsp ghee
-
2 bay leaves
-
1 tsp ginger paste
-
2 dried red chillies
-
1 tsp turmeric
-
Salt
-
Sugar (optional)
-
1 tsp The Bong Connection Bengali Garam Masala
Method
-
Pressure cook dal until soft.
-
Heat ghee and add bay leaves and dried red chillies.
-
Add ginger paste and cook well.
-
Add dal, turmeric, salt and sugar.
-
Simmer for 10 minutes.
-
Finish with Bengali Garam Masala.
Serve with luchi or pulao.
Paneer Kosha (Veg)
Ingredients

250 g paneer

Onion paste
-
Tomato puree
-
Ginger-garlic paste
-
Turmeric
-
Red chilli powder
-
Mustard oil

Method

Lightly fry paneer cubes.

Cook onion paste until golden.
-
Add ginger-garlic and tomato.

Add spices and cook well.

Add paneer and cook for 10 minutes.

Mixed Vegetable Curry (Veg)
Ingredients

Method

Fry vegetables lightly.

Egg Curry (Non-Veg)
Ingredients

Onion paste

Tomato
-
Ginger-garlic paste

Turmeric

Salt

Mustard oil

Method

Fry boiled eggs.
-
Prepare onion and tomato gravy.
-
Add spices.
-
Add eggs and water.
-
Simmer for 10 minutes.

Bengali Chicken Curry (Non-Veg)

Onion paste

Tomato

Ginger-garlic paste

Curd
-
Mustard oil
-
Salt
-
Turmeric
-

Method
-
Marinate chicken with curd and salt.

Cook onion until golden.
-
Add ginger-garlic and tomato.
-
Add chicken and cook on high flame.
-
Add water and cook until tender.
-
Finish with Bengali Garam Masala.

Kosha Mangsho (Non-Veg)
Ingredients

1 kg mutton
-
Onion paste
-
Ginger-garlic paste

Curd
-
Mustard oil
-
Salt
-
Turmeric
-

Method
-
Marinate mutton with curd and spices.
-
Fry onions until brown.
-
Add ginger-garlic.
-
Add mutton and cook slowly for 45–60 minutes.
-
Add water if needed.
-

Fish Kalia (Non-Veg)
Ingredients

6 pieces Rohu fish

Onion paste
-
Tomato
-

Mustard oil
-
Salt

Turmeric

Method

Fry fish pieces.
-
Prepare onion-tomato gravy.
-
Add fish and water.
-
Cook for 10 minutes.
-
Finish with Bengali Garam Masala.
Prawn Malai Curry (Non-Veg)
Ingredients

500 g prawns

Coconut milk
-
Onion paste
-
Ginger paste
-
Mustard oil
-
Salt
-
Turmeric
-

Method
-
Lightly fry prawns.
-
Cook onion and ginger.
-
Add coconut milk.
-
Add prawns.
-
Simmer for 8 minutes.
Sprinkle Bengali Garam Masala before serving.


Chicken Biryani (Non-Veg)
Ingredients

1 kg chicken
-
1 kg basmati rice
-
Yogurt
-
Fried onions
-
Ginger-garlic paste
-
Ghee
-
Saffron milk (optional)
-
Salt
-
3 tbsp The Bong Connection Biryani Masala
Method
-
Marinate chicken with yogurt, ginger-garlic paste, salt and Biryani Masala for at least 2 hours.
-
Cook basmati rice until 70% done.
-
Cook the marinated chicken until nearly tender.
-
Layer chicken, rice, fried onions and ghee in a heavy-bottomed pot.
-
Add saffron milk if using.
-
Cover tightly and cook on low heat (dum) for 25–30 minutes.
-
Rest for 10 minutes before serving.
Chicken Chaap (Non-Veg)
Ingredients

1 kg chicken leg pieces
-
½ cup yogurt
-
2 tbsp ginger-garlic paste
-
2 tbsp onion paste
-
Salt
-
Mustard oil
-
2 tbsp The Bong Connection Biryani Masala
Method
-
Marinate chicken with yogurt, onion paste, ginger-garlic paste, salt and Biryani Masala for 4 hours.
-
Heat mustard oil and add the marinated chicken.
-
Cover and cook on low flame until tender.
-
Cook uncovered until the gravy becomes thick and coats the chicken.
-
Serve hot with paratha or biryani.


Mutton Biryani (Non-Veg)
Ingredients

1 kg mutton
-
1 kg basmati rice
-
1 cup yogurt
-
Fried onions
-
Ginger-garlic paste
-
Ghee
-
Salt
-
4 tbsp The Bong Connection Biryani Masala
Method
-
Marinate mutton with yogurt, ginger-garlic paste, salt and Biryani Masala for 6–8 hours.
-
Pressure cook or slow-cook the mutton until tender.
-
Cook rice until 70% done.
-
Layer mutton, rice, fried onions and ghee.
-
Seal the pot and cook on dum for 30–35 minutes.
-
Let it rest for 10 minutes before serving.
Spicy Potato Fries with Bhaja Masala
(Veg Snack)
Ingredients

4 potatoes
-
Oil for frying
-
Salt
-
2 tsp The Bong Connection Bhaja Masala
Method
-
Cut potatoes into thin fries.
-
Fry until golden and crispy.
-
Sprinkle Bhaja Masala and salt while hot.
-
Toss well and serve immediately.
